On the outskirts of a small, south Louisiana town is Leauxcal Grub, LLC., family owned and operated by Molly Clayton, an accomplished chef and her husband Joey. The fully licensed commercial kitchen is situated on their 15 acre farm. For over 10 years, Molly has prepared ultra specialized diets for clients in the Acadiana area, but one client changed the way their family eats for good. Her own daughter was diagnosed with an autoimmune disease at the age of 3, and Molly went to work creating meals free from gluten and dairy, to comply with her new way of eating.
A client favorite has always been their paleo gumbo, which clients could purchase ready made. After years of them asking for the roux so they can make their own gumbo at home, she has finally done it! Its just like Maw maw made it, only better!
